Some recipes I’ve tried. With comments. Most have links to recipes. A few have short instructions. All were, one way or another, successful.
Waldorf Salad
You can sell this to the anti‐salad crew. Every time. Make it look industrial. Ask me, Waldorf Salad should look industrial. Ignore all pictures and variations on the web,
Celery
Green apples
Lemon juice
Walnuts
Dice apples and celery, then tip lemon and spoonful of caster sugar on top. Stops the apple browning.
Cheap mayonnaise (not olive‐oil based)
Mustard
Stir in. Then add,
Raisins/sultanas
Chopped walnuts
Lettuce
Stir the mix, then dump into the middle of a bowl of lettuce leaves.
Turkey Curry
Curry, or the curry is English colonial. It’s… it is what it is. I tried this Felicity Cloake Turkey Curry recipe because, well, I had a lot of cooked turkey. Know what? It was best thing in that line I’ve tried. You really want to do this job, you need to read the Jalfrezi Curry and Curry Base articles. But if you want an hour‐and‐a‐half Brit curry, this is good as it gets. So much so, no more Brit curry from me. Swap ingredients in this. Feedback— pan was scraped. And it resolved dry turkey.
Drop Pancakes
To me a pancake is risen by heat and air, and has no sugar. A scone has milk and sugar and is risen with bicarbonate. So a drop pancake is not a drop scone, and neither are a Scotch pancake or maybe even a griddle scone. I liked the Scotch Pancake recipe by Nigella Lawson, ’cos it’s got golden syrup and no butter, so seems proper. But didn’t have the ingredients. Then I hit on this post‐war Be‐Ro Drop Scone Recipe, which is scorched, poor, and the truth. So, scones it was for Pancake day.
Yellow Rice and Chicken
If you don’t dig yellow rice, you’re mean. I tried several recipes, didn’t like them, didn’t have ingredients, did this,
Get a used roast chicken, boil/scrpe all the bits left over off the bone. Keep boiling liquid as stock,
Onions
Garlic
Some form of chicken
Rice
Peas
Turmeric
Soya sauce
Chop garlic/onions, fry, throw in chicken and rice, top with turmeric, fry for minute until rice transparent, pour in stock, cover, leave for half an album. Peas in ten mins before end.
Keema
Indian mince. Don’t forget, some people don’t like or think much of curries. But Keema rocks. I used the Felicity Cloake writup but with beef mince. Lamb mince— what’s that, where did you get it, we can’t use that, I don’t want that, can you microwave it? No.
